I've always liked Bajio, either in Centerville or here in Layton. I had read that Costa Vida (which I don't care for, except for their DEE-licious Key Lime pie) had bought out the Bajio chain - so I assumed this one was in the history libros. Not so. Because there's a Costa Vida by the theatres, this one is still on its own. Thank goodness. Today, i had one of the best meals that I've had any where, at any price. The lunch specials as Andrea pointed out, were always a good value They're now $6 - and Friday's is a meat quesadilla. No more fish anything on the menu. But there are shrimp. Anyway, i reluctantly settled for what I thought was a boring quesadilla and - Oh, my - i loved it! They use a big burrito-size grilled tortilla and melt some cheese in the warmer, then add grilled marinated chicken, fold it in half and cut in triangles. then more cheese, shredded romaine, fresh pico and sour cream. But it's the green dressing that makes it all go. I'd dip the the Quuesadilla in the side of dressing, then give my taste buds a fiesta. Oh, it was good! Especiallly when chased by the delicious whipped & foamy orange drink, over their finely crushed and chewy ice. enjoyed it so much, I almost went back for dinner. Who knew, a lowly chicken quesadilla could be the culinary highlight of my year, so far. My co-workker loved her shrimp taco cooked in honey butter, and served with mango salsa and sides of flavored rice and refried beans. Thanks, Bajio. See you next Friday!
